Vegetable Biryani is a delicious rice dish made using alot of veggies, aromatic spices and herbs.
To my version of this delectable dish I have added paneer too, hence naming it Paneer Tikka Biryani. Though the process is lengthy but its very simple to make and it tastes really amazing.

Ingredients and spices that need to be Prepare to make Paneer tikka biryani:

  1. Paneer Tikka Ingredients:
  2. 200 gms Paneer
  3. 2 tbspn Curd
  4. 1 tbsp ginger garlic paste
  5. 1/4 tsp red colour
  6. 1 tsp Kashmiri Red Chilli Powder
  7. 1 tbsp Biryani Masala
  8. 1 tsp Chaat Masala
  9. 1 1/2 tsp mustard oil
  10. Ingredients for Green Paste:
  11. 2 onion sliced
  12. Handful Mint leaves
  13. Handful Coriander leaves
  14. 1 1/2 Ginger Garlic Paste
  15. 1-2 green chillies
  16. Ingredients for Gravy:
  17. 5 onion sliced
  18. 2 bay leaves
  19. 2 cloves
  20. 1 black Cardamom
  21. 1 star Anise
  22. 4 tomatoes (pureed)
  23. as per taste Salt
  24. 1 1/2 tbsp red chilli powder
  25. 1 1/2 tbsp Biryani Masala
  26. 1 1/2 tbsp Dhaniya Powder
  27. 3 cup Basmati rice
  28. as required Water
  29. 2 tbspn milk
  30. Handful mint leaves

Instructions to make to make Paneer tikka biryani

  1. Marinate the Paneer-
    In a bowl take 200grm paneer chopped in squares.
    To this add curd, red food colour, ginger garlic paste, kashmiri red chilli powder, Biryani Masala, chaat masala and 1½ tspn mustard oil. Keep it aside
  2. Method for Green paste
    In a mixer grinder add 2 onions sliced. Handful of mint leaves, handful of coriander leaves, ginger garlic paste, green chilli. Grind this to a fine paste.
  3. Method for Making Gravy
    In a big kadhai heat 3 tbspn oil. To this add bay leaves, 1 Cinnamon stick, 2 cloves, 7-8black pepper corns, 2 black Cardamom.
  4. Add 5 sliced onions. Saute until golden brown. Now add the green paste. Mix well. Cook for 2 minutes in low flame. Now add tomato puree. Mix well until the masala separates itself from the kadhai.
  5. Add all the spices like Kashmiri Red Chilli Powder, coriander powder, Biryani Masala and salt to taste.
    Mix well.
    Add ¼ cup water so that the Masalas cook well.
  6. Add all the veggies. Beans, carrot and potato. Add ¼ cup water and mix the gravy with the veggies. After 2 min, remove from the heat and transfer it in the pressure cooker. Let it cook until 2 whistles. If there is still water after opening the cooker, just reheat it and dry the water.
  7. Now heat 2tspn Mustard oil on a grill pan and Grill the paneer pieces on a low flame.
  8. Assembling the Biryani
    Now transfer half the gravy in a deep big kadhai. Layer it with half the quantity rice, saffron milk, (prepared by mixing 2 tbspn curd and kesar strands) paneer and mint leaves.
  9. Repeat the same process again. Now cover the lid and give it dum for 4- 5minutes on low flame.
  10. Paneer Tikka Biryani is absolutely ready.
